Okay, so I haven't been extremely focused lately. I'm trying to figure out where I should be all the while trying to make a little more money than I spend. I traveled to Colorado last week and I havent been the same since I got back to Virginia. I think I left a part of myself there. Summer might be a good time to go back. So maybe that's what I'll do. Anyway, check out these pics:

Easy Pan Fried Pierogies

Serves 1

Here is an easy pierogies recipe. In this recipe I boil the pierogies first. I then lightly pan fry them in olive oil with the garlic, onion, and other spices. I recommend using Mrs. T's Potato and Cheddar Pierogies for this recipe unless you want to make your own.

Ingredients:

  • 4 Pierogies
  • 1 clove of garlic, minced
  • 1/2 of a medium yellow onion, diced
  • 1 tablespoon Chardonay
  • 2 tablespoons olive oil
  • Dash of Tabasco sauce
  • Sea Salt to taste
  • Freshly Ground pepper to taste

Directions

Bring water to a boil in a medium pot. Preheat a large skillet to medium-high heat.

Add the pierogies to the boiling water. Boil them for 2-3 minutes or until they float. Drain them and set aside.

Meanwhile, add olive oil to the skillet and let it heat up for about a minute. Add the pierogies to the skillet along with the chopped onions.Add the white wine and hot sauce. Let the sauce reduce a bit while the onions turn dark yellow and begin to caramelize.

Turn the Pierogies. Add the garlic. Simmer until the pierogies are slightly browned on the outside, and the onions and garlic are golden brown. Be careful not to burn the garlic.

Add salt and pepper to taste. Arrange the pierogies in the center of a plate, spoon the caramelized onions and garlic over top and enjoy!

A pierogie consists of a pocket of dough and a potato filling. Traditionally the potatoes are whipped and then mixed with onion, cheese, and sometimes meat. They are then baked, fried, or boiled.


Pierogies originated in Eastern Europe back in the late 1800's. Ever since, people around the world have been enjoying them. No one knows for sure the exact location from which pierogies originated and their history is somewhat of a mystery but many people think that the first pierogies came from Russia, Poland, Czechoslovakia, The Ukraine, or Slovakia. In these regions potatoes have been used as a main source of nutrition for centuries.

Everywhere around Eastern Europe people have a different word for the Pierogie. It's a Perozshkii in Ukrainian, a Piragi in Latvia, and a Perogi in Poland. The Russian call them Pelmenis. They have been referred to as Perogys, Pirohis, Perogies, Piroghis, Pirogis, Piroshkis, Perogis, Peroshkies, Pipirozhkis, Pyrohys, Pirozhkis and even Pyrizhkys.
